Fried Shrimp and Crab Claw Dumplings
This is always a party favorite and a great hang activity because they’re fun to make. What a lot of people don’t realize is that dumpling wrappers are easy to find and can be stuffed with anything. We use them instead of pasta to make ravioli – and it works great. This recipe is just one of many we hope to share with you.
- I package of dumpling wrappers
- 1 lb medium shrimp, peeled and chopped
- 1 small can of shelled crab claws, chopped
- 3 scallions, chopped
- Juice of 1/2 lemon
- Vegetable oil
- Dipping Sauce
Mix the ingredients in a bowl and let sit for 10 minutes. Lay out your wrappers on a cutting board. Place a teaspoonful of the mixture on the center of the wrapper – try to get a bit of everything in there. Wet the edges of the wrapper by dipping your finger in a little water. Fold over the wrapper and press to seal the edges. Using your fingers, fold the edges together in an accordion-like fashion.
In a skillet, heat a cup of vegetable oil. When hot, add the dumplings but don’t let them touch. They will cook pretty fast so once the skillet is filled, start turning them in the order they were place in. Once they are golden brown, about a minute or so, take them out an place them on a paper towel to absorb excess oil. Then arrange on a serving plate and serve with a dipping sauce. You can use anything you like, even a simple soy sauce and scallion. Here’s a tasty guacamole-based dipping sauce you can make in a few minutes.
- 2 tblspn Guacamole – pureed
- 1/4 cup Soy sauce
- 1 tspn Lemon Juice
- 1 tblspn Rice wine vinegar
- salt, pepper
