Chicken Salad with Grapes and Pecans

Who hasn’t made grilled chicken breast for dinner and had a bunch left over? No one. And what happens? You end up throwing them out. Here’s a great alternative that you can either make from scratch or, like we do, use leftovers. It’s a delicious chicken salad that makes a great lunch, snack or backyard summer side dish. And you can make it in about six minutes.

You’ll need:

4 chicken breasts – grilled (or leftover)

2 cups seedless grapes

1 cup shelled pecans

1/2 cup mayonaisse

1/3 cup chopped dill

salt and pepper

Cut the chicken breasts into 1/2 inch cubes. In a bowl, combine the chicken, mayonaisse, dill, salt and pepper. Mix until the chicken is full coated. Add the grapes and pecans. Give it a quick toss and that’s it. Enjoy!
