Long Hot Pepper and Caper Salsa
This is a fantastic, 5-minute Italian salsa that you won’t be able to stop eating. We discovered it at a wine making party – yeah, sounds a bit hoity-toity, but it was a lot of fun. It’s just two ingredients and it’s great!
- 3-4 long hot peppers – green skin!
- 1 jar of capers
When you buy the long peppers, make sure the skins are all green. This is an indication of heat. If you get one that’s yellowing, chances are it’ll be too hot for the salsa – the all-green ones are mild and you won’t burn your face off. The second time we made this we weren’t aware of this and our faces went numb after the first bite – so wash your hands thoroughly after you prepare this – and DON’T TOUCH YOUR FACE!
Ok, all you need to do is cut the long peppers length-wise and remove all the seeds and stems completely. Chop the peppers into slivers. Place into a bowl. Drain the liquid from the capers into the bowl with the chopped peppers. Pour them onto the cutting board and with the side of your knife, mash them flat. Now chop them fine and add them to the bowl. Mix well and serve with tortilla chips, crackers, pita chips or your favorite Italian bread. That’s it. Enjoy!
